5 cup butternut squash 1 pound cooked lean ground turkey 12 oz brick cheese 2 cup tomato(es) 5 small jalapeno pepper(s) 5 Tbsp reduced-fat sour cream 1 cup onion(s) 16 oz canned enchilada sauce 10 small corn tortilla(s) Instructions
pour 1/2 sauce into bottom of baking pan. set tortillas side by side covering bottom of pan. cook in skillet ground turkey, onions, and peppers. after meat is browned and fully cooked add shredded butternut squash (looks like shredded cheese so kids dont know difference) cook down a bit for 10 min mix well, spread over tortillas in pan.work sour cream into mixture not mixing too well add cheese (shredded) on top of mixture. layer remaining tortillas on top of cheese and pour remaining sauce on top of that cook for 40 min at 375*
